If you were/are a member of the Food Writer’s Forum, you will know about the changes to that publication and how ‘Boost Notes Tuesday’ is moving to Mastermind for Food Writers. Change can be good. At least I keep telling myself, which is why I am working on building FoodStak. More about that in the coming weeks.
This week on FoodStak, I learned that podcasting can be so much fun. It enables me to connect with food writers and learn from the conversations that I hope people find interesting too. I get very nervous with each one and become more critical of myself. But I am sure they will become easier over time.

Apple Recipes.
We are well into apple season, and I have two small apple trees that I really should be growing as espaliers rather than as a standard tree structure. This year, despite the harsh summer heat, they have produced an amazing crop. I am leaving the Apples on the branches as long as possible to allow the fruit to take on natural sweetness, which is often lost in apples bought from the supermarket.
Apple Crumble with a Streusel Topping
This recipe for Apple Crumble with a Streusel Topping makes 2 medium sized desserts with 4 to 6 servings each. It uses a Homemade Streusel Topping with oats and nuts, from a large batch I make regularly and keep in the freezer, ready to use any time I need to top a pie or small tarts like these Streusel Mince Pies or fruit crumble. I just grab what I need straight from the freezer.
Apple Oats and Cinnamon Muffins
These Apple, Oat, and Cinnamon muffins are the ultimate wholesome breakfast or mid-morning treat, with a textured crumb thanks to the addition of porridge oats. This recipe yields 12 bakery style muffins, each one packed with juicy, grated apples and warmed with a generous hit of Cinnamon spice.
Dorset Apple Cake
This original recipe for this Easy Dorset Apple Cake can be found on page 74 of the first Clandestine Cake Club Cookbook.
For this version, instead of using baking apples, I have used sweet dessert apples and reduced the amount of sugar needed to combat the tart flavour of baking apples that was used in the original recipe.
Until next time.
Happy reading, Happy Baking.
